When the Simon family launched the Private Reserve line of meats nearly 30 years ago, they were inspired by the winemaker practice of releasing “Reserve” wines from the very best vineyards, grapes and vintages. So, one cold (-30°F) day in January, the Simon and Laithwaite families gathered together in Omaha, Nebraska to do just that. They tasted a range of fine and exceedingly rare wines from around the world. The tasting was conducted "blind” (i.e. the bottles and labels were not shown) and the wines were judged on how well they complemented the steak. In the end, this Cabernet from Napa Valley’s famed Oakville district was the clear winner.

This ultra-rare Cabernet Sauvignon hails from Napa Valley’s prestigious Oakville district. Meticulously crafted by the legendary Bill Knuttel with hand-harvested fruit from two elite Oakville vineyards, it was aged in fine French oak barrels for a long 25 months.
The wine brims with sumptuous flavors of blackberry, ripe blueberry, black cherry and hints of cocoa, with a wave of velvety tannins. While delicious now, it will also age beautifully and is perfect for your favorite cut of Private Reserve steak.
